And yes, its name stands for exactly what it is. A soup made of a bird’s nest. The Chinese delicacy is made from the nests of cave swifts, a species of birds.
Dubbed as the Caviar of the East, this soup contains the nest of the bird, which is built using the bird’s saliva. The saliva is reduced with other ingredients into a gelatinous soup which sells from $910 to $4.535 per 500 grams. A bowl of soup usually costs $30, but the red version is $10 per gram.
The bird’s nest soup is the most expensive animal product consumed by humans, so if you want to pay a huge amount of money for basically a bit of spit… prepare your money.
