One of the finest chefs in United States, Portale is a former jewellery designer who was first in his class at the Culinary Institute of America.
Portale was the mentor and tutor of some of the best chefs in New York, such as Tom Valenti and Christopher Lee and is a pioneer of the New American Cuisine movement.
Alfred Portale is the chef and co-owner of The Gotham Bar and Grill and a master of fish and game preparation, his dishes being really impressive.
You don’t want to open a molecular cuisine place now, but I would open a steakhouse again in another city, even in this climate.
