1Bukhara
Ask anyone in New Delhi where can you eat the best food and the answer will be Bukhara. Oh, even Bill Clinton and Barack Obama have dined there.
In the 20-plus years since this restaurant opened its doors, it has become legendary. It’s got an extensive string of awards to its name, and is consistently voted amongst the world’s best restaurants.
The food at Bukhara is cooked in clay ovens or tandoor in the traditional style of the Indian North-West Frontier region. This style of cooking requires great expertise on the part of the chefs, since the meat is not accompanied by any sauce or gravy, but is only pre-marinated and cooked before serving. It takes a Chef years of meticulous training and dedication to master the technique.
The house specialty is the dal — black lentils that are stewed for 24 hours with tomatoes, ginger and garlic. The chicken kebab marinated in cream cheese, vinegar and coriander is also exceptional.
