The chef creates dishes that are very Californian, but are also a little Spanish, Mexican, or Middle Eastern. He is so famous for his culinary skills, that his food was dubbed as Centian.
The bäco, or the Centenian Sandwich, is similar to a bigger taco or a thicker flatbread, and is filled with beef, pork carnitas and a Catalan sauce called salbitxada made from nuts and red pepper. So, do you understand the multi-influenced menu now, right?
Chef Centeno has a lot of dishes made of vegetables, such as Japanese eggplant with creamy feta and cipollini vinaigrette, and sunchokes with tarragon, dukkah and buttered croutons, to name just a few.
