Even though the name of this luxurious cheese traduces as “horse cheese” horses have nothing to do with the making of it.
Although, the cheese is named as such because back in the days horses were used for the transportation of it!
Famous for it’s taste but also for its price tag, the Caciocavallo Podolico is made from the milk of an extremely rare cow breed named Podolica in the Campania region of southern Italy.
Having a creamy texture and a shiny rind, the cheese often has a fruity flavor because in the summer time the herds are moved up the mountain so they can feast on strawberries, blueberries and cherries.
