This used to be the most expensive coffee in the world, but according to this list, the Kopi Luwak coffee is ranked 4th on the list.
But that doesn’t mean that the coffee is less valuable. In fact, what makes it so sought and valuable is the process of selection and digestion.
What does digestion has to do with this coffee, you may ask? Well, the Kopi Luwak coffee undergoes fermentation inside of an animal.
The Civet is the animal we were referring to, that consumes the coffee cherries, leaving the coffee beans to be collected later from the animal’s feces.
The Civet emits enzymes during the digestion process that alter the taste of the product, as one might expect.
