Native to Southwestern India, cardamom are small seed pods, spindle-shaped and triangular in cross section, with black seeds and a thin papery outer shell.
Guatemala is the world’s biggest exporter and producer of this spice, followed by India.
There are 2 types of cardamom, black and green. The black one has a smokey aroma, and the taste is similar to mint.
The green one is one of the highest priced by weight and it’s used to spice the sweet dishes and add flavour to coffee and tea.
In medicine, green cardamom is used to treat gums, infections in teeth, pulmonary tuberculosis, digestive disorders and inflammation of eyelids.
