The milk used for this “luxury piece” is cow’s milk that belong to the same herd ( it is a must).
The cows feed on the wild grass on the mountains only during the summer months giving a natural and nutritive milk.
Although the Beaufort D’été gets aged a minimum of 5 months before it is sent in the market; a prolonged aging time would make the cheese much more deeply-flavored and delicious.
