If you haven’t figured it out by now, the coffee is the result of this furry guy’s digestive system. The Luwak’s are known for eating raw coffee beans, the civet digests the soft part of the coffee fruit, yet does not digest the inner beans ( the actual coffee beans ) and excretes them. Through this process the enzymes remove the bitter taste and add an unique flavor to the beans. The locals collect them and then they are sold.
Because of the rarity of process and the distinct flavor, these beans cost as much as $1000 a pound and can vary from $50-90 per cup.
To taste such an exquisite beverage an appointment is necessary with one of the few establishments that carry such an exotic blend.
