The founder of Iggy, Ignatius Chan, was pretty inspired when he opened the restaurant. Inspired by his travels, the dishes have unique flavours and textures, having European, Japanese and Australian influences and ingredients.
The restaurant is one of the best restaurants in the whole Asia, and it serves balanced and fresh food. In 2010 Iggy relocated to The Hilton, and two private dining rooms, a show kitchen and a walk-in-cellar were added to the other already existing 28 seats.
The wine list is 25 pages long, and menus include sea Urchin with cauliflower and ponzu, and Cappellini with Sakura ebi, konbu and shellfish oil.
