How much is Emeril Lagasse worth in 2026?
Our figure is $80 million, in a range of $50 million to $120 million. This one is a rough estimate: the 2008 sale is documented in SEC filings, but his restaurant company publishes no accounts.
Public estimates disagree mainly on the 2008 sale and the restaurants. Counting the $50 million as if he banked all of it ignores his partners and tax, and restaurant sales aren’t the owner’s wealth.
How Emeril Lagasse built it
- Sold the brand, kept the kitchens. The 2008 sale of TV, books and products left his restaurants and New Orleans office outside the deal.
- Stayed on after the sale. He signed a ten-year employment agreement with the company that bought his brand.
- Kept opening at 66. A second Meril opened at the M Resort in Las Vegas in July 2026.

| Source | Our estimate | What it rests on |
|---|---|---|
| 2008 brand sale, after tax | $30 million | Lagasse and partners got $45 million in cash and $5 million in stock. We assume 80 percent was his ($40 million) and 25 percent went to tax. Both percentages are our assumptions. |
| Restaurants | $27.5 million | We count seven land restaurants at an assumed $3.5 million each, and three Carnival ship venues at an assumed $1 million each. No revenue or ownership split is public, and his son co-owns the flagship. |
| Pay after 2008, after tax | $11 million | He signed a ten-year employment agreement with the buyer. The pay was never itemised in what we read, so we assume $2 million a year for ten years, including TV and cruise work, keeping 55 percent. |
| Savings from before 2008 | $12 million | Assumed. It equals about $670,000 a year kept across the 18 years between leaving Commander’s Palace in 1990 and the sale. |
| Total | $80 million | Rounded from $80.5 million. No earn-out is counted, and we assume investment returns and living costs cancel out. |
The earn-out he needed a very good year to collect
The price could have reached $70 million. Nation’s Restaurant News reported the top-end figure when the deal was announced in February 2008. The extra $20 million had a catch.
The formula paid $9 million if average EBITDA across 2011 and 2012 hit $10.25 million, plus $4 for every $1 above that, capped at $20 million. By our calculation, the full $20 million needed average EBITDA of $13 million: $11 million extra at $4 to the dollar is $2.75 million above the goal. The buyer’s own estimate of year-one EBITDA was about $8 million, so the first payment alone required 28 percent growth.
We could not find a filing that says whether any of it was paid, so it isn’t in our ledger. The next data point isn’t encouraging: Martha Stewart Living Omnimedia’s 2014 annual report records an $11.4 million impairment on the Emeril business, leaving the trademarks at a fair value of $34.7 million. For scale, that is $15.3 million below the $50 million paid for the whole package, by our math.
Looked at from his side, the sale was well timed. The assets took in about $14 million of cash-basis revenue in 2007, so $50 million was 3.6 times revenue, and 6.25 times that $8 million EBITDA estimate.
What he kept
The sale excluded his 11 restaurants and the corporate office. Today’s list is shorter and more decorated. Wikipedia’s restaurant list shows Emeril’s, Meril, Emeril’s Kitchen and an airport site in New Orleans, Emeril’s New Orleans Fish House and Delmonico Steakhouse in Las Vegas, and three Emeril’s Bistro venues on Carnival ships. Add the second Meril below and you have the seven land sites in our ledger. Carnival made him Chief Culinary Officer in December 2022.
The flagship is the asset with the most reputation attached. It holds two Michelin stars, and it ranks No. 20 on North America’s 50 Best Restaurants 2026, where he also won the Icon Award. Son EJ is its co-owner, so we don’t credit the whole of it to Emeril.
Still opening in 2026
At 66, he opened a second Meril at the M Resort in Las Vegas, his first off-Strip restaurant there, in July 2026. Emeril’s Chop House is due at L’Auberge Casino and Hotel Baton Rouge this year, replacing 18 Steak. Neither report gives terms, so we count nothing for the Baton Rouge site yet.
Two things would move the figure most: a sale of the restaurant company, and any disclosure of how the casino deals pay him.
