Head Chef Anatoly Komm at the Varvary has been named the chef leading Russia’s culinary revolution.
He has created a menu based on the modern concept of molecular gastronomy. It’s unmistakably Russian food, but in a new incarnation. Every evening, Russian super chef Anatoly Komm serves up a 15-course tasting menu for 25 diners at Varvary.
It’s no surprise that his restaurant was the first ever Russian establishment to make it into the prestigious World’s 50 Best list.
Even the interior is interesting here: a dark red and black palette mixed with extravagant silver cutlery. This season, tasting sessions from the maestro are on the theme ‘Fire and Ice’. There will be raspberry and dandelion sorbet with basturma chips in candy floss, chicken liver sweets, sweet veal with peas and other unprecedented weird and wonderful things.
